Salmon Cucumber Salad⁣

How do you whip up a tasty, filling, and nutritious lunch in 5 minutes? A lunch that you can pack easily, and that keeps well in the fridge? The secret is having canned wild salmon in your pantry, and mayonnaise in your fridge. Throw in some veggies, or even some hard-boiled eggs or potatoes, and you've got a quick, hearty, and delicious meal.⁣

Wild salmon is extremely rich in Omega-3 oils and fat-soluble vitamins, both of which are critical for brain and bone health, and are commonly deficient in our modern diet.⁣


Ingredients⁣

One 6 ounce can of wild-caught sockeye salmon⁣

3/4 cup finely diced cucumber⁣

1 celery stalk, chopped finely⁣

1 scallion, chopped finely⁣

4 tbsp mayonnaise⁣

Juice of 1/4 lemon⁣

Drain salmon, and use a fork to break up into small pieces. Add all other ingredients and mix. Taste, and add more lemon juice or mayonnaise if desired. Enjoy!
