Chicken thighs are three times higher in fat than chicken breasts. Fats from pastured animals are critical for brain and nervous system health. Fatty meats are also very satiating, and will keep you full for a long time.

Ingredients
Ghee for cooking
Boneless skinless chicken thighs
Spice rub:
1 tsp salt
1/2 tsp pepper
1 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
Mix spices together to make spice rub. Rub both sides of chicken thighs with rub. Save excess rub for another time.
Heat ghee in a saute pan on medium heat until melted. Add thighs and cook for 4 minutes uncovered. It is useful to cover the pan with a splatter screen. Flip thighs and cook for another 4 minutes. Cut into thickest thigh to make sure it is cooked through and not pink. If still pink, keep cooking until done. Serve and enjoy right away!
