If you are new to eating liver, chicken liver is the easiest way to start. The flavor is mild and the texture in smooth. The sweetness of fried onions is a lovely complement to the liver in this easy classic dish.
Ingredients
1 lb chicken livers
1 large yellow onion, thinly sliced
2 tbsp flour (I use all purpose flour. If you are gluten-free, you can use a gluten-free all purpose flour, or sweet rice flour)
Ghee for frying
Salt and pepper to taste
Heat ghee on pan on medium heat. Add onions and cook until soft and lightly browned, stirring frequently, about 10-15 minutes.
While onion is cooking, rinse liver and drain. Pat dry with paper towels, and cut into small pieces. Add flour and mix well to coat the liver.
When onions are ready, season them with salt and pepper and put aside. Add ghee to pan on medium heat, and add liver. Cook, stirring occasionally, for about 4 or 5 minutes. Liver should be brown outside and pink inside. Take care not to overcook. When done, season with salt and pepper.
Serve with the onions and enjoy! I love eating this for dinner with smashed potatoes and sauerkraut, for a satisfying nutrient-rich meal.
