Fried Chicken Liver and Onions⁣


If you are new to eating liver, chicken liver is the easiest way to start. The flavor is mild and the texture in smooth. The sweetness of fried onions is a lovely complement to the liver in this easy classic dish.⁣

Ingredients⁣

1 lb chicken livers⁣

1 large yellow onion, thinly sliced⁣

2 tbsp flour (I use all purpose flour. If you are gluten-free, you can use a gluten-free all purpose flour, or sweet rice flour)⁣

Ghee for frying⁣

Salt and pepper to taste⁣

Heat ghee on pan on medium heat. Add onions and cook until soft and lightly browned, stirring frequently, about 10-15 minutes.⁣

While onion is cooking, rinse liver and drain. Pat dry with paper towels, and cut into small pieces. Add flour and mix well to coat the liver.⁣

When onions are ready, season them with salt and pepper and put aside. Add ghee to pan on medium heat, and add liver. Cook, stirring occasionally, for about 4 or 5 minutes. Liver should be brown outside and pink inside. Take care not to overcook. When done, season with salt and pepper.⁣

Serve with the onions and enjoy! I love eating this for dinner with smashed potatoes and sauerkraut, for a satisfying nutrient-rich meal.⁣
